Add Gitea to SETUP.md's Docker layer section
README.md documented the running service, but the from-scratch rebuild guide was missing it entirely - added a section matching the existing Portainer/Nextcloud format, including the uid-collision gotcha (host's vmail user already owns 1000:1000) and the X-Forwarded-Proto fix needed for correct clone URLs.
